Dinners to Share with ARB

We’ve discovered that it’s much easier to make one dinner for all of us, puree a little for ARB, and all eat together at 5. Here are some of our successful family dinners:

  • Lasagna with whole wheat noodles, ground beef, spinach, mushrooms, and red bell peppers (we made ARB’s with no cheese)
  • Black bean and sweet potato enchiladas, loosely based on the Whole Foods recipe (ARB had no cheese or chile, so they were non-chiladas)
  • Roasted veggie pasta with red peppers, zucchini, and eggplant. (plus parmesan cheese for the parents)
  • black bean tomatillo soup from Kalyn’s Kitchen
