Tostadas Picadillo to share with ARB

Put the following ingredients in slow-cooker for 6-8 hours on low, or simmer on the stove for 1 hour. Serve on tostadas with sour cream, guacamole, diced tomatoes, and other delicious things.

  • 1 tablespoon extra-virgin olive oil
  • 2 lbs beef (or beef and chorizo mixture), browned
  • 1 tablespoon chili powder
  • 2 teaspoons cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup water
  • 2 tablespoons tomato paste
  • 2 tablespoons red-wine vinegar
  • 2 diced onions
  • 1 cup frozen (or thawed) corn, peas, and carrots
  • 1 diced potato
  • 5 cloves garlic, minced
  • 1 28-ounce can diced tomatoes
  • 1/4 teaspoon salt, or to taste
  • Freshly ground pepper to taste
