Spring/Summer Vegetable Rotation

I’m aiming for a 7-day rotation of seasonal vegetables and frozen favorites:

1. Frozen peas

2. Frozen broccoli

3. Frozen baby carrots

4. Frozen edamame

5. Roasted cauliflower (When ARB sees this in the TO, he points and says, “yum yum yum!”) http://www.bonappetit.com/recipe/parmesan-roasted-cauliflower

6. Sweet potato (fries/baked)

7. Squash (he doesn’t like this, but we’re working on it!)
